THE POWER
OF WINEMAKING
OF WINEMAKING
The majority of our fruit is sourced from growers within the Margaret River Wine Region and we occassionally select small batches from Geogrpahe and Frankland River if there is something special or unique on offer.
Each of our source vineyards has its own unique terrior with a specific micro-climate and soil types, producing fruit with individual characters and flavours.
We see it as a tremendous benefit to be able to 'cherry pick' different varieties from within the region and choose sites where they reach their highest potential in aroma and flavour.
Within the Margaret River wine region there are several distinct grapegrowing areas which have historically been referred to a "sub-regions". Even though they are not offical registered apellations (called Geographical Indicators - GI's in Australia) we still use ythis term to indentify the area from which we sourced our grapes for the S.R.S. range.
"For me, winemaking is about balancing the natural power of the fruit with precision, something Margaret River does exceptionally well. The region’s maritime climate allows for both intensity and finesse, which is reflected in a focus on texture, balance, and clarity. Wines are guided gently through fermentation and élevage, with oak used to support rather than dominate, building subtle, layered complexity. This is the style being pursued at Flametree Wines, where the aim is to craft wines that are both expressive and refined.— Winemaker, Binh Lim
Binh Lim is a globally
trained winemaker whose journey began in 2008, studying Wine & Food
Fermentation in South Korea.
He moved to France in 2013 to pursue the prestigious D.N.O. (Diplôme National d’Œnologue) at the University of Toulouse, one of the world’s most respected qualifications in winemaking,
graduating in 2016.
His early career in France combined rigorous academic training with hands-on experience across diverse wine regions, shaping a deep understanding of both classical and modern winemaking.
Following his
graduation, Binh refined his craft through vintages in France, the United
States, and New Zealand, gaining invaluable insight into regional diversity,
vineyard expression, and precision winemaking.
Since joining Flametree Wines in 2018, Binh has played a key role in producing wines that reflect the purity, balance, and distinctive character of Margaret River.
Driven by a global perspective and a commitment to quality, his winemaking philosophy centres on precision, structure, and expressing the true identity of each vineyard.
Stretching 120 km along WA’s coast, the Margaret River region is famed for its gravelly soils and maritime climate, producing some of Australia’s finest grapes. Although it accounts for just 3% of national grape production, it delivers over 20% of Australia’s premium wines.
Red and white varieties are evenly represented, with Cabernet Sauvignon, Chardonnay, Sauvignon Blanc, Semillon, Shiraz, and Merlot all thriving here. Certain sub-regions excel with particular varieties.

In 1999, Dr John Gladstones identified six distinct sub-regions: Yallingup, Carbunup, Wilyabrup, Treeton, Wallcliffe, Karridale.
At Flametree, we source the best fruit from these areas to craft our SRS (Sub-Regional Series) — small-batch wines showcasing the region’s finest Cabernet Sauvignon, Chardonnay, and Sauvignon Blanc. Produced only in exceptional vintages, these wines are our most distinctive and limited releases.
